You need the following ingredients:

  • 80 g of ground almonds
  • 1 teaspoon Baking powder
  • 60 g of powdered sugar
  • 2 packets of vanilla sugar
  • salt
  • 2 eggs + 2 egg whites
  • 250 g of cold butter
  • 400 g of cherries
  • 200 g of sugar
  • 1 tbsp cornstarch

The preparation

Mix flour, baking powder, powdered sugar, almonds, vanilla sugar and a pinch of salt together. Separate eggs. Add butter and egg yolk to the flour and knead into a smooth dough. Wrap dough in plastic wrap and put in the refrigerator for about 30 minutes.

Wash cherries, stalk and stone. Prepare square springform (about 24x24cm) and lay out the bottom with parchment paper. Grease the edge of the mold. Roll out 2/3 of the dough on a floured work surface to the square and place it on the mold bottom. Pierce dough with a fork several times. Bake in preheated oven at 180 ° for approx. 15 minutes.

Beat all 4 egg whites and a pinch of salt until stiff. Add sugar gradually and continue beating until the sugar is dissolved. Add cornflour.

Remove baking tin from the oven and allow to cool briefly. Distribute cherries and spread the mixture (egg mixture) on top. Roughly rub or crumble the remaining dough and spread on top. Bake cake at the same temperature for about 30 minutes.

  • 750 g of cherries

  • 2 tablespoons cornstarch

The preparation

  • 5 eggs
  • 125 g of sugar
  • 120 g of flour
  • 1 tbsp cornstarch

For covering:

  • 400 g of cherries
  • 350 ml sour cherry nectar
  • 2 tbsp sugar
  • 2 to 3 tsp cornstarch

For the cream:

  • 500 g mascarpone
  • 250 g double cream cheese
  • 75 g of powdered sugar
  • 1 packet of vanilla sugar
  • 250 g of whipped cream
  • 1 packet of cream sticks
  • 2EL cherry jelly
  • 150 g ready made meringue

The preparation

Separate eggs, beat egg whites and pinch of salt until stiff. Stir the egg yolks and sugar until creamy and add half egg whites. Sift flour and cornstarch over and fold in. Add the rest of egg whites and stir. Place the mixture in a springform pan with lined baking paper on the bottom and bake in a hot oven at 180 ° C for approx. 30 minutes.

Wash cherries, stalk and stone. Cook with sugar and nectar for about 5 minutes. Stir cornstarch with 2 tablespoons of cold water and tie cherries. Allow to cool slightly.

Divide chilled biscuit horizontally into 3 trays. Place a tray on a cake plate and wrap it with a cake ring. Distribute cherry mixture on the floor, put on the next floor and press lightly. Leave to cool for about 30 minutes.
